Brightwater is one of only a handful of schools in the US to teach the lost craft of whole animal butchery. Local farmers supply the school with whole slaughtered cattle, pigs and lamb, so students can learn how to properly fabricate the meat for restaurants and food markets.
This room is equipped with curing cabinets, a table saw, an industrial meat grinder and a Buffalo chopper, as well as an industrial meat extruder for making sausages and deli meats, such as salami.
