Brightwater's production kitchen holds 16 work stations and is designed for high-end 24-hour food production where a flow of operations ends at the pass (the counter at the window to the room). It is equipped with a Jade Suite as well as chimneys located in the center of the stoves to circulate heat from the oven and the stove burners to the top shelf, over the stove, to keep food warm. This circulated heat replaces infrared lighting that can dry out food.
The kitchen is also used for special event catering and team-building courses for local businesses.
